Cake Ingredients
2 cups blanched almond flour
1/4 cup unsweetened cocoa powder
1/2 tsp sea salt
1/2 tsp baking soda
1/2 cup agave nectar
1/2 cup unsweetened applesauce
1/2 cup ghee
2 large eggs
1 TB vanilla
Preheat oven to 350 F. Grease a 9 inch cake pan and dust with almond flour. In a large bowl, combine dry ingredients. In a medium bowl, combine wet ingredients. Stir the wet ingredients into the dry ingredients until thoroughly combined. Pour into cake pan. Bake for 35 to 40 minutes until a toothpick inserted into the center comes out clean. Let cool in pan for 1 hour.
Icing Ingredients
1/2 cup dark chocolate chips
2 tsp of coconut oil
1/2 tsp of vanilla abstract
Combine ingredients. Melt over low heat until smooth. Pour over cake.
Afterthoughts......I doubled the recipe in an attempt to make a layer cake but a few things went wrong. First off, at around 28 minutes I noticed that the kitchen went from smelling delicious to slightly burnt. So out came the cakes, a bit overdone. The cake was also a bit dry; something to add more moisture is needed. AND the cakes stuck to the pan. So there was no layer cake. Nevertheless, SHE ATE IT AND ENJOYED IT! Knowing me, she said "Let me guess, this has no sugar in it or something?" Haha! After explaining to her what kind of cake it was i even got a "I LOVE PALEO!" So, while it was not 100% paleo with the icing added, I'd say it was a victory and a heck of a lot better than any sugar filled cake of the past.
With that being said, a Paleo Challenge is coming up. Some members currently eat paleo, some really want to and need something to push them through. Here's your chance. Details are being worked out and I'm thinking February, in anticipation of the CF Open, looks like a great time to kick this off. In the meantime, your homework is to research as much as you can and get some food ideas that will work for you come challenge time. Feel free to share too! Stay tuned!

thought I'd share my very favorite Black Bean Cupcake recipe with you . . . . yummmmmm!
1 can black beans drained and rinsed
3 eggs, separated
2 tablespoons unsweetened applesauce
1 tbs vanilla
pinch or two of sea salt
6 tablespoons butter, softened (I sub coconut oil or ghee, or half and half of each)
3/4 cup xylitol (I will use raw coconut crystals, truvia or agave - whatever is in the pantry)
1/4 cup cocoa
1/2 tsp baking soda
1 tsp baking powder
Preheat oven to 350. Grease cupcake pan or use papers. In blender, puree beans, yolks, applesauce, vanilla and sea salt until smooth. In separate bowl, beat whites until fluffy. In large bowl, beat butter and "sugar" until fluffy and then add black bean puree and mix well. Stir in cocoa, baking powder and soda. Beat on medium until completely combined, then fold in egg whites. Cook about 40 minutes. Frost when cool if you want to . . . . Your frosting recipe sounds great!
BTW - my kids never knew my secret until one of them read the recipe ;o)

Crepes
6 eggs
1 1/2 cups almond flour
1 cup coconut milk
1/2 cup water
2 tbsp coconut flour
2 tbsp honey
1 tsp vanilla
1/2 tsp sea salt
Place everything in the VitaMix or whisk and blend for 60 seconds. Let sit for at least 30 minutes.
Heat a crepe pan over medium heat and add enough coconut oil to coat the pan. Add a laddle full of batter to the pan. Swirl to coat the pan thinly. Let cook until brown and carefully flip. If they are not holding together for you add another tbsp of coconut flour to the batter.
